It’s our first day of Vegetable diet! We had Chopsuey for lunch earlier and tonight for dinner I cooked Asparagus Frittata and Cream of mushroom soup.

So here’s my easy to do Asparagus Frittata:
You will need:
Olive oil
Asparagus (the hard part removed and the remaining stem are cut diagonally for about 1 inch) 
Cheese (I used cheddar but you can use any cheese that you have, Swiss Cheese tastes great too!)
Eggs (I use 3-4 eggs just make sure eggs are more than the Asparagus to achieve a thick 
1. Heat olive oil on a 10-inch skillet and sauté onion until translucent. Add Asparagus, salt and pepper then cover. Add slightly beaten eggs when the Asparagus is tender. 
2. Grate Cheese on top and cover. You can actually stop here depending on how you like your eggs. But since I like my eggs well done, I flip the frittata on the skillet cover and then back flip it again on the skillet cooking the other side. 
You can also try microwave or an oven 🙂
